TGIF, friends!
I hope you had a wonderful week. I read an anonymous quote the other day that read: “Life is a salad of choices: make it fresh, make it colorful, and savor every bite.” It really resonated with me. I know, I’m a little weird, but it got me thinking about the choices I make around food every day.
Have you ever left a meeting, wrapped up at the office, or finished catching up with a client and suddenly realized you are starving? Your head feels fuzzy, you cannot think straight, and you end up grabbing whatever questionable food happens to be nearby.
I see you, and I’ve been you.
I cannot say the last time I’ve grabbed fast food like McDonald’s, and I’m a little proud that I’ve never been to Taco Bell. I have heard it’s good, and I sort of believe the people who say that.
I’ve done many things to make sure I’m not making those stops and dealing with food noise. Planning saves time, calories, and those hard-earned dollar dollar bills. Instead of ending up in that situation, let’s try something different and plan so you have a healthy option ready. A little preparation goes a long way. Planning saves time, calories, and those hard-earned dollar dollar bills.
Here are some of the simple food items I have carried with me to stay on track:
- Pre-ordered healthy meals from Kellyn Mobile Market
- Refillable water bottle
- Apple slices or the whole dang apple
- Baby carrots, not my favorite, but an easy grab
- Sliced cucumbers with everything bagel seasoning
- Cups of hummus, pickles, and guacamole
- Cheese stick
- Canned seltzer water
- Juice Plus Complete Shake Sachets

My recommendation for this week is to take a deeper dive into the Kellyn Foundation and try ordering from their Mobile Market. According to their website:
“The ‘Eat Real Food’ Mobile Market delivers fresh, local produce and Kellyn Lifestyle Medicine Meals throughout the Lehigh Valley. The market’s whole food, plant-based meals and produce are packed with fiber, phytonutrients, and protein while avoiding all animal products and added oils. The “Eat Real Food” Mobile Market visits multiple sites on a regular weekly schedule and includes sampling, nutritional education, and recipes. Our goal is to provide healthy food access at an affordable price, providing the opportunity and knowledge for families to make the healthy choice the easy choice.”
If you are not familiar with them, please check out their website and explore the amazing community programs they offer. One of the easiest pickup spots is already a regular networking location for Lehigh Valley business builders at the NCC Fowler Center from 2:45 pm to 4:30 pm on Thursdays.
If you have been following my biweekly blogs, you know I often suggest a plant-forward approach to eating. I encourage you not to be afraid and give these meals a try. Trust me, you will not be disappointed, and you likely will not miss the animal products.
With a little planning, you can order a home-cooked meal from Chef Amanda, save money, and calories. Add in my go-to easy button of Juice Plus fruits and veggies whole food capsules (gummies or drink stick), and give yourself a real peace of mind. Don’t forget, kids are free up to age 25!
P.S., look what I found in my pocket as I was leaving work (after writing this article), SNACKS!
