There are two things you can often hear me saying:
“Every little bit counts,” and “I need to get my sh*t together.”
Both apply to this week’s blog on meal prepping. Let’s start this beautiful Friday off by getting our sh*t together and prep a breakfast meal. I do not handle being hungry very well, and I will be a disaster of bad choices if my breakfast isn’t ready!
My go-to is overnight oats with Juice Plus Complete protein powder mixed in:
- ½ cup oats
- ½ cup milk of choice
- 1 scoop JP+ Complete protein powder (I prefer the tasty vanilla for the morning!)
- 1 scoop Naked peanut butter powder
- ½-1 tsp chia or flaxseed
- ¼ cup frozen berries (Spring offers fresh California strawberries)
- Sprinkle of nutmeg and cinnamon
I like to use glass containers, in case I decide to heat them, let time plus the fridge do the work. This combo hits all the nutrient goals that I like to prioritize:
- Around 25 grams of protein helps to enhance satiety (feeling full and satisfied)
- Oats plus JP+ Complete keeps the blood sugar stable and enhance digestion with fiber
- Around 400 calories of well-balanced, nutrient-dense food to cut cravings
- Cinnamon adds heat, and nutmeg may improve my mood

My second choice for breakfast is a good old-fashioned egg! Eggs are versatile, and if you haven’t tried egg whites, you may be missing out and sabotaging your wellness goals. Try substituting 1-2 regular eggs with just the egg white, and you’ll still get the good stuff, like protein, and you’ll save calories and fat. Check out this easy frittata recipe. I can’t wait to meal prep this weekend!

A little planning of real, whole foods over the weekend can make the rest of the work week smooth sailing. This is not about perfection, just a sweet spot of nutrient balance with protein, healthy fats, and antioxidants. Think fresh, seasonal produce for the biggest nutritional punch, and let’s get that energy level steady and reduce everyday mealtime decision fatigue.
You’ve got this!
